The Origin, a myth. Three different stories about the origin of tapas have been told. They begun in Andalucia , but how? We leave it to you to pick!

King Alfonso X's loved drinking and his doctor advised him to have some bites of food while shipping to stave off an irritable bowel syndrome. Tapas are result of his mythical edict that all in his realm should eat little plates of food while drink.

Andalusian bartenders used to cover the glass of wine with a tapa (Some food slice of bread) on windy days to avoid the dust or sand to go in the customer's drink.

When bartender served the Sherry they did it with a saucer on the top to keep the flies out - ham, cheese or olives - the saltiness would keep them thirsty. Plus their generosity attracted customers back!!

Nevertheless, Tapas have always been traditionally and usually food to go with drinks that both perfectly reflect the outward-looking Spain and capture the innate sense of adventure of the home cooking.
